Practice:
Main ingredients: 1 oval watermelon (about 2500 grams), 2 small chicks (about 800 grams).
Ingredients: 50 grams of water-fat sea cucumber, 25 grams of water-fat mushrooms, 25 grams of water-fat magnolia slices, 25 grams of ham, 50 grams of water-fat scallops, and a little shredded onion and ginger.
Seasoning: 10 grams of cooking wine, 3 grams of refined salt, 50 grams of watermelon juice, 20 grams of white oil.
Make:
- Peel off the outer skin of the watermelon (you can also engrave a pattern on the outer skin, in the middle of the watermelon, use a knife or a semi-circular drawing knife to pull a rectangular lid about 10 cm long and 5 cm wide, and dig out from the mouth Take out the flesh of the melon (keep the melon cover, don’t dig too thin, leave more melon flesh), then rinse with water.
- Cut the magnolia slices, sea cucumbers, mushrooms, and ham into long slices. Except for the ham, soak them in boiling water for a while. After the chicks are slaughtered, remove the hair, remove the five internal organs, and wash them cleanly. Use a knife to remove the big bones, wings and leg bones of the two chickens (retain the ring bones), then chop off the tips of the chicken feet and wings, and put them in a basin , add cooking wine, refined salt, monosodium glutamate, white oil, watermelon juice, magnolia slices, sea cucumber, mushrooms, shredded onion and ginger, mix well and marinate until delicious.
- Put the watermelon in a large porcelain pot, then put the marinated chicken and the ingredients into the watermelon (two chicken heads and wings should be slightly exposed in the watermelon opening), and then cover the cut melon cover, use Put the bamboo skewers in place (the melon cover is facing up) and steam them over high heat until the chicken is rotten. Remove the bamboo skewers to expose two chicken heads (crest heads).
